In a large mixing bowl, combine the dry ingredients.
In another bowl, whisk together the wet ingredients until well combined.
Slowly pour the wet ingredients into the dry ingredient mixture. Stir gently until just combined. Be careful not to overmix; a few lumps are okay. This will create a thick, slightly lumpy batter.
Heat a non-stick griddle or a large skillet over medium-high heat. You can lightly grease it with a small amount of butter or cooking spray if needed.
Once the griddle is hot, ladle about ¼ cup of batter for each pancake onto the cooking surface. Allow them to cook until you see bubbles forming on the surface, usually around 2-3 minutes.
Carefully flip the pancakes with a spatula and cook for an additional 2-3 minutes, or until they are golden brown and cooked through.
Transfer the cooked pancakes to a plate and cover them with a clean kitchen towel to keep them warm while you cook the remaining batter.
Serve your fluffy buttermilk pancakes warm, drizzled with honey or maple syrup for a delicious breakfast or brunch.
